I didn’t press the cheese after banding like you suggest for I have never heard that before. I put on 3 layers of cheesecloth dipped in melted lard. I hope it’s okay!

Thanks for visiting.

The wine fridge I use came with the wooden shelves, which is part of the reason why I choose it. The other reason was because of the dual temperature zones which meant I could set it to two different temperatures depending on whether I am ripening or aging. This is particularly good for my Camembert and Bries.

I have denuked a microwave and just have it blowing air for a small amount of cheese but would like to get something a little bigger.
My other half is busy building me a cheese room – so a small wine fridge would be ideal and where did you get the wooden shelves did you make them
