    Hi.
    I made a batch of buffalo blue. Left it for a week ageing and no blue mould has appeared.

    Karen, have you pierced it yet? The bulk of the mold should form on the inside after piercing but you should see mold appear outside at about now or the next few days. Do you have decent humidity? Refrigerators are a very dry environment for good blue mold growth, but it can be done. Just be patient and you should see results soon.
