    My camambert is growing little blue spots but not its own white coat … what have i/am i doing wrong? too cold? not enough salt? was made in a more sterile environment that first lot which was perfect … thank you

    Ant, blue spots are usually caused from too much moisture. Is there any droplets of water falling on your cheese in the aging box or area? The white mold grows well in moist but not too moist conditions. You will usually get toad skin if moisture is high and blue mold when drops hit the cheese.
