Chevre in olive oil w/ herbs & flower is blowing out! Help

Ive been making these for years. Just started to stock pile for the holidays. The chevre I”M using is fresh and good. The jars just start to bubble and over flow, They get under pressure. I have not change a thing. Only one flavor does not do it the spicy I roll it it dried chili, sea salt & dried parsley. What can it be?
