Chunky cheddar

    Cheddar curds are still visible as separate chunks in the pressed cheese. They have not consolidated into a smooth whole, although the cheese is holding together, not crumbling. Should I bother waxing it or throw away?

    Derek, I never throw cheese away until it is given enough time to either go a bad direction or good one. You might find that you created something quite good and my vote is to give it time.

    Thanks mate, have taken your advice and waxed it. Will give it a few months and see what the story is!
