GuestHello, I am new to cheese making, though I made my own yogurt for years.
I recently got some goats, and am excited about making cheese, but…. my cheeses are coming out very good.
I got a goat cheese making kit from New England cheese making. First batch was made with a gallon of milk. I had to freeze the milk to get a gallon. My goat doesn’t give a ton of milk.
I followed all the directions, and the set was very weak, but the resulting cheese was ok.
For the second batch, I added calcium chloride, the culture pack and 3 drops of single strength vegetable rennet. Let sit for 12 hours. Barely any set. And the cream separated out. After draining, I just had a little bit of dry grainy clumps.What am I doing wrong?
