    Is there anyone has experience about making roquefort cheese from packaged roquefort cheese? Is it possible?

    Mrb-w,
    I have done that and it was very successful. I was not happy with the mold cultures I was using and purchased a small piece of my favorite blue cheese (St. Agure) and blended it with a small amount of water to create a clone culture. It tasted perfect and it has become a standby for me. I have never used it early as a ripening agent and don’t know if that will work but starter culture is much more easily obtained than good blue mold. I believe the big guys protect their culture variations and we can’t get the really good ones.
