    My name is Tony, and my wife and I’ve been living in Paraguay for 17 years now. We bought a milk cow and a cheese making kit, then started looking for more information than came with the little booklet. Curd-nerd has helped us a lot.

    I started making cheese because I can’t buy cheddar here. Then there was the extra milk I couldn’t drink or sell. . .

    Oh, and I meant to add a list of my cheese making equipment.
    One Jersey/Holstein/other heifer. She eats well and gives good milk.
    One hand-crank cream separator.
    One electric pasteurizer.
    One advanced cheese making kit from Midwest Home Brewing
    One homemade cheese press.

    No ph tester yet.
    No cheese cave. I just toss the waxed rounds in the fridge.
