    Good morning,

    Just about to tackle my First Hard Cheese, Parm. Reading over the recipe, when your bringing your Milk up to the temperature and you start adding in your Rennet, Lipase, ETC…Do you keep the heat on the stove once you add the ingredient and cover for the required time? Or do you add the ingredient and cover for the designated time and resume heat after?
