    Hi there, I’m completely new to this and I’m researching hard on how to go about my first forays into cheese making.

    I have an old fridge that I can hopefully use as a small cheese cave and on its highest setting, it holds at 11 degrees C

    Is that in the right ball park for aging hard cheeses like cheddar, or should I try and get it to go a little higher?

    I’ve seen there are ways of using external thermostats, but my technical skills are limited 🙂

    Any advice gratefully recieved! This site is an absolute mine of useful info.
