Wrapping Brie

    Hi All

    I have just made my second Brie and it is fully covered in mould and ready to be wrapped. However I don’t currently have any cheese wrap and I wondered if anyone has used baking paper and aluminum foil to wrap their cheese successfully for the last stage of the maturation period?

    I would be grateful to hear off alternatives?

    I have used waxed paper and an overcoat of regular parchment (baking) paper. Cheese ripens well and its easy to get off. Hope this helped .
