Also, I heard that when you once cut into camembert maturation stops. Do you have any suggestions on how can I save this cheese? Thank you.

Hi Patricia

It sounds like your Camembert is ripening too quickly. It is soft all through? Or only in the center?

It will fine to eat either way, but may not have the depth of flavour you are hoping for.
