Today I’m making my 8th and 9th cheese. Both Bel Paese with 20lt of milk each. last week I managed to mess up 40lt of milk when Vat Pasteurizing. For sume unforeseen reason curds formed when temp. reached 145 F. This time pasteurization went OK. Now waiting for curds to set. Hope this make is alright. Wasting 40lt of milk can be costly.
