Hi all,

My cheese grow up a nice skin of white mold within a week or two and then is starting to be attacked by wild penicillin mold and green/blue spots appear during week 3. It’s home, but I try relatively clean environment (not a commercial tho). Temperature is +12C.
Any advice?
