    I wasn’t sure where to put my introduction, so hope this is ok. I am 75 and just started making cheese last July after taking some courses. I love doing it, but now that some of the cheeses are being opened, errors are showing up. They all seemed good but obviously I am a beginner. I have made mostly hard cheeses and have made 23 wheels so far. I look forward to learning from more advanced cheese makers.
